Sloppy Joes With Buffalo Chicken

Sloppy joe sandwiches with all of the flavours of buffalo chicken wings! I've been on a sloppy joe fever lately, and these buffalo chicken sloppy joes are a quick and easy Father's Day lunch! The meat in these sloppy joes is chicken, and the sauce has a generous amount of buffalo chicken spicy sauce! Buffalo chicken wings are frequently served with celery and/or carrot sticks, all of which are used in the meat sauce, along with onions and garlic. The blue cheese or ranch dressing given on the side to dip the wings, celery, and carrots into is the final component of the chicken wing dish, and it's a fantastic complement to these sandwiches! These buffalo chicken sloppy joes are a simple dish to cook for dad on Father's Day, and they're also a fantastic weeknight supper!

  • 1/2 cup onion, diced
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 2 cloves garlic, grated/minced
  • 1/2 cup chicken broth (tomato sauce or water)

  • 1/4 cup blue cheese dressing or ranch dressing

Directions

  1. In a large pan/skillet, heat the oil, then add the chicken, onions, carrots, and celery and sauté, breaking the chicken apart as it cooks, for about 10-15 minutes, or until the chicken is cooked through and the veggies are soft.
Cook for approximately a minute, or until the garlic is aromatic.
  2. Cook until the sauce thickens about 5 minutes, by adding the stock mixed with the cornstarch and spicy sauce to the pan.
  3. Enjoy the buffalo chicken combined with the dressing and crumbled blue cheese on top of the bread!
  4. Optional: Add the blue cheese to the buffalo chicken mixture and mix/melt it in!
  5. Serve with coleslaw or blue cheese coleslaw as an option!
